2.5kg whole Chicken

100g Dilite-Mi chicken seasoning

(1): Clean & pierced chicken
(2): Rub in seasoning evenly on the inside and the outside.   
(3): Wrap seasoned chicken in foil & allow to marinate for at least 1 hrs, or leave in fridge overnight for a deeper flavour. 
(4): Follow manufacturer's guide for oven roasting.   
(5): Roast in a hot fan assisted oven mark 175°c. Cook for approximately 45-50 minutes, depending on weight of chicken. 
 Take tray with chicken from oven, unwrap and drain off liquid in a small skillet. Set aside the juice to  make gravy/sauce. 

(7). Cover chicken with foil and put it back into the oven to cook for a further 20 minutes or more, depending on the weight of the meat. 
(8). In the last 10 minutes of cooking, test with a skewer to ensure meat is cooked; uncover chicken and allow it to brown slightly in the oven, but do not overcook. 
(9). When finished, take it out of the oven and allowed to cool for a few minutes before carving. 

 Serve with steamed or fresh vegetables, roast potatoes, boiled or rice.
